Controne is the land of beans: fresh and fertile land have given to this bean one of his most renowned qualities: a thin skin and ease of cooking. The tradition of cultivating beans in Controne handed down for hundreds of years and the types planted by local farmers still are varied: the type made famous Controne and that is optimally adapted over the centuries to this distribution area is the ecotype white, a little bean seeds very white, round-shaped and slightly ovoid, without spots or eyes. The pods containing them are also white-cream.
Thanks to these characteristics, it is matched with every dish and to various types of wine, both red and white.
